Heather Giles's Banana Cake
Heather bakes a quantity of banana cake for each meeting. It is VERY popular and greatly enjoyed by everybody. Heather is normally kind enough to make enough for second and occasionally third helpings!!

5oz (140g) self raising flower, sieved together with ¼ teaspoonful bicarbonate of soda 1 ripe banana 2oz (60g) soft butter 1 egg 5oz (140g) sugar ½ teaspoonful vanilla essence pinch of salt |
Place the egg, banana, sugar, butter, vanilla essence and salt in a liquidiser and blend on speed 3 to a smooth consistency.
Sieve the flower and bicarbonate of soda into the bowl and pour the liquidised mixture over. Mix on Speed 2-3 moving the beaters through the mixture just long enough to combine thoroughly.
Bake in a greased 7 inch (18 cm) square tine for 40 minutes (approximately) at 375°F (190°C |
Heather always bakes double the quantity and bakes in a tray type bake tin or split between two 7 inch (18cm) round tins. If you are using a fan oven, she recommends 160°C for around 30 minutes.
If the cake is baked in two round tins, she normally prepares some mashed banana with a dash of lemon juice to stop the banana browning. One of the cakes is turned upside down on a plate, the filling spread on what was the underside and then the other cake placed on top. The end result is shown in the picture below.
Toffee sauce and whipped cream makes a very tasty type gateau.
